  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 oz cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the softened cream cheese, chopped spinach, minced garlic, Parmesan cheese, mozzarella cheese, and Italian seasoning until well combined.
  3. Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  4. Season the chicken breasts with salt and pepper.
  5. Stuff each chicken breast with the spinach and cheese mixture, securing with toothpicks if necessary.
  6. Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 2–3 minutes on each side until golden brown.
  7. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20–25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let rest for 5 minutes before serving.

  • For a spicier kick, add a pinch of red pepper flakes to the filling mixture.
