  • 5 oz fresh baby spinach
  • 1 large clove garlic
  • 3 tablespoons olive oil, divided
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 pound flank steak
  • Black pepper, to taste
  • 4 oz crumbled feta cheese
  • Fresh cilantro or parsley, chopped (for garnish)
  • Optional: Lemon juice, red pepper flakes, roasted bell peppers, or zucchini

Instructions

  1. Cook the corn: Boil or grill the corn on the cob until tender, then cut the kernels off the cob. If using pre-cooked corn kernels, warm them up and set aside.
  2. Prepare the spinach sauce: In a pan, heat 1 tablespoon olive oil over medium heat. Add the garlic and sauté for 30 seconds until fragrant.
  3. Add the spinach to the pan and cook until wilted. Transfer to a blender or food processor along with balsamic vinegar, cumin, chili powder, salt, and a squeeze of lemon juice if using. Blend until smooth.
  4. Cook the steak: Season the flank steak with salt and pepper. Heat the remaining 2 tablespoons olive oil in a skillet over medium-high heat. Sear the steak for 4–5 minutes per side or until desired doneness is reached. Let it rest for 5 minutes before slicing.
  5. Assemble the plate: Spoon the spinach sauce onto each plate, top with sliced steak and a portion of corn. Sprinkle with crumbled feta and garnish with fresh herbs. Add red pepper flakes or roasted veggies if desired.
