Description

Strawberry Eton Mess is a delightful, no-bake dessert that combines sweet strawberries, fluffy whipped cream, tangy sour cream, and crunchy meringue cookies. It’s quick to prepare and perfect for spring and summer gatherings.

Ingredients

Scale

Essential Ingredients:

  • 1 (16-ounce) package fresh strawberries, quartered
  • 2 tablespoons white sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon raspberry vinegar
  • 12 leaves fresh basil, sliced
  • 1 cup heavy cream
  • 1 tablespoon white sugar (for whipping cream)
  • 4 tablespoons sour cream
  • 2 ounces cream cheese, softened
  • 3 tablespoons white sugar (for cream mixture)
  • 1/4 cup chopped almonds
  • 1 (4.3-ounce) package plain meringue cookies, coarsely crushed

Optional Add-Ons:

  • Additional fresh berries (blueberries or raspberries)
  • Chocolate sauce drizzle
  • Fresh mint leaves for garnish

Instructions

  1. In a mixing bowl, toss strawberries with 2 tablespoons white sugar, balsamic vinegar, raspberry vinegar, and sliced basil. Let sit for 10–15 minutes to macerate.
  2. In a separate large bowl, whip the heavy cream with 1 tablespoon sugar until soft peaks form.
  3. In another bowl, mix sour cream, cream cheese, and 3 tablespoons sugar until smooth. Gently fold in the whipped cream until fully combined.
  4. Fold in half of the crushed meringue cookies and chopped almonds into the cream mixture.
  5. Layer the cream mixture and macerated strawberries in individual serving glasses or a trifle dish. Top with remaining crushed meringue and almonds.
  6. Garnish with additional berries, mint leaves, or a drizzle of chocolate sauce if desired. Serve immediately.

Notes

  • For best texture, assemble just before serving to keep the meringue crisp.
  • You can prepare the cream and strawberry mixture ahead of time and refrigerate separately.
  • Swap basil with mint for a more classic twist.
