This Strawberry Peach Crisp is a delightful summer dessert made with juicy peaches, sweet strawberries, and a golden brown oat crumble. Easy to make and full of warm, fruity flavor, it’s the perfect treat served with a scoop of vanilla ice cream.

Ingredients

Scale

Essentials:

  • 1/2 cup old-fashioned oats
  • 3/4 cup brown sugar (divided: 1/2 cup for topping, 1/4 cup for syrup)
  • 2/3 cup all-purpose flour
  • 1/3 cup salted butter, melted
  • 1/2 tsp cinnamon
  • 2 1/2 cups fresh peaches (about 3, peeled and sliced)
  • 1 cup sliced strawberries
  • 3 tsp cornstarch
  • 1/3 cup water
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract

Optional Add-Ons:

  • Chopped pecans or walnuts
  • Extra berries (like blueberries or raspberries)
  • Shredded coconut

Substitutions:

  • Use quick oats for a softer texture
  • Unsalted butter with extra pinch of salt
  • Granulated sugar + molasses for brown sugar
  • Whole wheat flour for added fiber

Instructions

  1. Preheat: Preheat oven to 350°F (175°C).
  2. Make Topping: In a bowl, mix oats, 1/2 cup brown sugar, flour, and cinnamon. Stir in melted butter until crumbly.
  3. Layer Base: Lightly grease a 9×9 inch pan. Press half of the crumb mixture into the bottom of the pan.
  4. Add Fruit: Spread sliced peaches and strawberries evenly over the crumb base.
  5. Make Syrup: In a small saucepan, combine 1/4 cup brown sugar, cornstarch, salt, and water. Stir constantly over medium-high heat until thickened. Remove from heat and add vanilla extract.
  6. Assemble: Pour syrup over the fruit, then sprinkle remaining crumb mixture on top.
  7. Bake: Bake in preheated oven for 35 minutes until topping is golden and filling is bubbly.
  8. Broil (Optional): For a crispier top, broil for 2-3 minutes, watching closely.
  9. Cool & Serve: Let cool slightly before serving. Great with vanilla ice cream!

Notes

  • Use ripe, juicy peaches for the best flavor.
  • This recipe is great with frozen fruit too—just thaw and drain before use.
  • Add a squeeze of lemon juice for a bit of brightness if your fruit is very sweet.
