Description

This Strawberry Rhubarb Salsa is a fresh, zesty twist on traditional salsa, blending sweet strawberries, tart rhubarb, and a spicy kick of jalapeño. Perfect as a dip, topping for grilled meats, or spooned over tacos!


Ingredients

  • 1 cup fresh rhubarb, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño pepper, seeds removed and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon honey
  • Salt, to taste
  • Optional:
  • 1 avocado, diced
  • 1/2 cup cooked corn kernels
  • 1 small garlic clove, minced

Instructions

  1. In a medium bowl, combine the strawberries, rhubarb, red onion, jalapeño, and cilantro.
  2. Add the lime juice, honey, and a pinch of salt. Stir gently to combine.
  3. If using optional ingredients like avocado, corn, or garlic, fold them in now.
  4. Let the salsa sit for 10–15 minutes to allow the flavors to meld.
  5. Serve fresh with tortilla chips, on tacos, or as a topping for grilled chicken or fish.

Notes

  • If rhubarb is particularly tart, you can lightly blanch it for 30 seconds and then cool before adding to the salsa.
  • This salsa is best enjoyed fresh but can be stored in the fridge for up to 2 days.
  • Adjust the level of jalapeño to your spice tolerance or substitute with a milder pepper.
