- 1 cup fresh rhubarb, finely chopped
- 1/4 cup red onion, finely chopped
- 1 jalapeño pepper, seeds removed and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tablespoon honey
- Salt, to taste
- Optional:
- 1 avocado, diced
- 1/2 cup cooked corn kernels
- 1 small garlic clove, minced
Instructions
- In a medium bowl, combine the strawberries, rhubarb, red onion, jalapeño, and cilantro.
- Add the lime juice, honey, and a pinch of salt. Stir gently to combine.
- If using optional ingredients like avocado, corn, or garlic, fold them in now.
- Let the salsa sit for 10–15 minutes to allow the flavors to meld.
- Serve fresh with tortilla chips, on tacos, or as a topping for grilled chicken or fish.
Notes
- If rhubarb is particularly tart, you can lightly blanch it for 30 seconds and then cool before adding to the salsa.
- This salsa is best enjoyed fresh but can be stored in the fridge for up to 2 days.
- Adjust the level of jalapeño to your spice tolerance or substitute with a milder pepper.
