Instructions
- In a food processor, pulse the rolled oats and raw cashews until they reach a fine, flour-like consistency.
- Add the pitted Medjool dates to the processor and pulse until the dates are finely chopped and well incorporated.
- Add the creamy cashew butter, pure maple syrup, vanilla extract, and salt to the mixture. Blend until a sticky dough forms, scraping down the sides as needed.
- Transfer the mixture to a bowl and fold in the crushed freeze-dried strawberries until evenly distributed.
- Using a 2-tablespoon scoop or your hands, form the dough into balls and place them on a parchment-lined tray.
- Freeze the energy bites for 20-30 minutes to set.
- Optional: Melt the white chocolate chips with the coconut oil in the microwave in 30-second increments until smooth.
- Drizzle the melted white chocolate over the chilled energy bites and sprinkle additional crushed freeze-dried strawberries on top if desired.
- Place the bites back into the refrigerator for a few minutes to allow the chocolate to set.
