  • 1 cup raw cashews
  • ½ cup creamy cashew butter
  • ¼ cup pure maple syrup
  • ¼ cup Medjool dates, pitted (about 3-4)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup freeze-dried strawberries, crushed
  • Optional: ¼ cup white chocolate chips
  • Optional: 1 teaspoon coconut oil

Instructions

  1. In a food processor, pulse the rolled oats and raw cashews until they reach a fine, flour-like consistency.
  2. Add the pitted Medjool dates to the processor and pulse until the dates are finely chopped and well incorporated.
  3. Add the creamy cashew butter, pure maple syrup, vanilla extract, and salt to the mixture. Blend until a sticky dough forms, scraping down the sides as needed.
  4. Transfer the mixture to a bowl and fold in the crushed freeze-dried strawberries until evenly distributed.
  5. Using a 2-tablespoon scoop or your hands, form the dough into balls and place them on a parchment-lined tray.
  6. Freeze the energy bites for 20-30 minutes to set.
  7. Optional: Melt the white chocolate chips with the coconut oil in the microwave in 30-second increments until smooth.
  8. Drizzle the melted white chocolate over the chilled energy bites and sprinkle additional crushed freeze-dried strawberries on top if desired.
  9. Place the bites back into the refrigerator for a few minutes to allow the chocolate to set.
  10. Store the energy bites in an airtight container in the refrigerator for up to one week or in the freezer for up to three months.
