Ingredients

  • 23 fresh peaches, pitted and chopped
  • 1 cup blueberries
  • 1/4 to 1/3 cup toasted pepitas

For the Lemon-Honey Dressing:

  • 1 teaspoon extra virgin olive oil
  • Juice of 1/2 lemon
  • Juice of 2 medium lemons
  • 4 teaspoons honey
  • 12 teaspoons extra light tasting olive oil (optional, for smoother dressing)
  • Cracked black pepper, to taste

Optional Add-Ons:

  • Feta cheese, crumbled or cubed
  • Avocado slices
  • Grilled chicken strips

Instructions

  1. Prepare the kale by removing stems and chopping the leaves. Massage with a tiny bit of olive oil if desired to soften.
  2. In a large bowl, combine kale, chopped peaches, blueberries, and toasted pepitas.
  3. In a separate small bowl or jar, whisk together the extra virgin olive oil, lemon juices, honey, light olive oil (if using), and cracked black pepper.
  4. Pour the dressing over the salad and toss until evenly coated.
  5. Top with optional ingredients like feta, avocado, or grilled chicken before serving.
