- Juice of 2 medium lemons
- 4 teaspoons honey
- 1–2 teaspoons extra light tasting olive oil (optional, for smoother dressing)

Instructions
- Prepare the kale by removing stems and chopping the leaves. Massage with a tiny bit of olive oil if desired to soften.
- In a large bowl, combine kale, chopped peaches, blueberries, and toasted pepitas.
- In a separate small bowl or jar, whisk together the extra virgin olive oil, lemon juices, honey, light olive oil (if using), and cracked black pepper.
- Pour the dressing over the salad and toss until evenly coated.
- Top with optional ingredients like feta, avocado, or grilled chicken before serving.
