Salad:
- 1½ cups fresh strawberries, hulled and sliced
- 4 cups baby spinach or spring mix greens
- 1/2 cucumber or 1/4 red onion, thinly sliced
- 1/3 cup crumbled goat cheese or feta
- 1/4 cup toasted nuts (pecans, walnuts, or almonds)
- Optional: Sliced avocado for extra creaminess
- Optional: Extra summer fruits like blueberries or sliced nectarines
Balsamic Vinaigrette:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a small jar or bowl, combine olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, salt, and pepper. Shake or whisk until well blended.
- In a large salad bowl or serving platter, arrange the greens.
- Top with sliced strawberries, cucumber or red onion, crumbled cheese, and toasted nuts.
- Add avocado slices or other fruits if using.
- Drizzle with balsamic vinaigrette just before serving and toss gently.
