Description

This Superfood Berry Salad is a vibrant, nutritious dish packed with antioxidant-rich berries, super greens, crunchy seeds, and creamy goat cheese. It’s topped with a refreshing creamy lemon herb dressing that brings all the fresh flavors together for the perfect healthy meal or side dish.


Ingredients

  • 3 cups super greens mix (spinach, arugula, Swiss chard, chicory, cabbage, Brussels sprouts)
  • 1 cup kale, roughly chopped
  • 1 cup strawberries, diced
  • 1 cup blackberries
  • 1 cup blueberries
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 tablespoons pepitas (pumpkin seeds)
  • 1/4 cup blueberry goat cheese, crumbled (or regular goat cheese)

For the Creamy Lemon Herb Dressing:

  • 1/4 cup plain Greek yogurt (nonfat works)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon mustard
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup fresh mint leaves, packed
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons fresh oregano leaves, packed
  • Coarse salt and ground black pepper, to taste

Optional Add-Ons:

  • Sliced avocado
  • Cooked quinoa
  • Grilled chicken or shrimp
  • Extra fruits like raspberries, kiwi, or mango

Instructions

  1. In a large mixing bowl, combine the super greens mix, chopped kale, strawberries, blackberries, and blueberries.
  2. Add in the chopped pistachios, pepitas, and crumbled goat cheese. Set aside.
  3. In a blender or food processor, combine the Greek yogurt, lemon juice, mustard, olive oil, mint, parsley, oregano, salt, and pepper. Blend until smooth and creamy.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately or chill for 15–20 minutes to allow flavors to meld. Add any desired optional toppings before serving.

Notes

  • For a vegan version, use plant-based yogurt and skip the goat cheese or replace with a vegan alternative.
  • Prep the dressing in advance and store it in the refrigerator for up to 3 days.
  • Best served fresh, but leftovers can be stored in an airtight container for 1 day.
