  • 2 to 3 ripe peaches, pitted and diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice and zest of 1 lime
  • 1 small garlic clove, grated
  • 1/2 jalapeño, minced (adjust to taste)
  • 1/4 tsp sea salt (plus more to taste)
  • Optional add-ons: diced avocado, pineapple, mango, cucumber, or green onions

Instructions

  1. Prepare your produce: Wash all produce. Pit and dice the peaches, and finely dice the red bell pepper, red onion, and jalapeño.
  2. Mix the salsa: In a medium bowl, combine the peaches, red bell pepper, red onion, minced jalapeño, chopped cilantro, grated garlic, lime juice and zest, and sea salt.
  3. Stir gently: Mix to combine without breaking up the peaches too much. You want them to maintain their shape.
  4. Adjust to taste: Taste and adjust the salt, lime, or jalapeño as needed.
  5. Chill: Cover and refrigerate for 30 minutes to let the flavors meld.
  6. Serve: Enjoy with tortilla chips, on grilled chicken or fish, or spooned over tacos or grain bowls.

Notes

  • Substitutions: Use canned peaches in juice (drained) if fresh aren’t available. Replace cilantro with parsley or basil for a different flavor profile.
