Sweet Pineapple and Ginger Sauce

  • Author: Sarah Mendez
  • Total Time: 30 minutes
  • Yield: About 1.5 cups 1x

Description

This Sweet Pineapple and Ginger Sauce is a vibrant, tropical condiment bursting with fresh pineapple flavor, balanced by warm ginger and a hint of lime. Perfect for glazing meats, topping desserts, or stirring into yogurt.

Ingredients

Scale
  • 1 ripe pineapple, peeled, cored, and diced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 tablespoon lime juice
  • 1 pinch salt

Optional Add-Ons:

  • Chili flakes – for a spicy twist
  • 1/4 teaspoon cinnamon – adds warmth
  • Fresh mint leaves – stir in at the end for a cooling finish
  • 2 tablespoons coconut milk – for a creamy, tropical variation

Instructions

  1. Cook the pineapple: In a medium saucepan, combine diced pineapple, grated ginger, brown sugar, water, lime juice, and a pinch of salt.
  2. Simmer: Bring to a boil over medium heat, then reduce to low and simmer for 15–20 minutes, stirring occasionally, until the pineapple is soft and the sauce thickens slightly.
  3. Blend (optional): For a smoother sauce, use an immersion blender or transfer to a blender to puree until smooth. For a chunkier texture, leave it as is.
  4. Adjust flavors: Stir in any optional add-ons like cinnamon or coconut milk. Add chili flakes for heat if desired.
  5. Cool and store: Let cool, then store in a sealed jar in the refrigerator for up to 1 week.

Notes

  • This sauce pairs beautifully with grilled chicken, pork, tofu, or drizzled over pancakes and ice cream.
  • Use fresh pineapple for the best flavor, but canned (in juice, not syrup) can work in a pinch.
  • For a thicker sauce, simmer a bit longer or add a teaspoon of cornstarch mixed with water.
