Ingredients
Scale
For the Chicken
- 2 boneless, skinless chicken breasts (or thighs)
- 1 tablespoon taco seasoning (or homemade: cumin, paprika, garlic powder, onion powder)
For the Quesadilla Sauce
- ¼ cup mayonnaise
- 1 tablespoon pickled jalapeño juice
- 1 teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon sugar
- 1 tablespoon finely minced pickled jalapeños
For Assembly
- 4 large flour tortillas
- 1½ cups shredded Mexican blend cheese
- 1 tablespoon butter (for grilling)
Instructions
- Season the chicken with taco seasoning and cook in a skillet over medium heat until fully cooked (internal temperature of 165°F/74°C). Let rest, then slice thinly.
- In a small bowl, mix together all sauce ingredients until smooth. Set aside.
- Spread a layer of the quesadilla sauce over half of each tortilla. Top with sliced chicken and a generous sprinkle of shredded cheese.
- Fold the tortilla over to create a half-moon shape.
- Melt butter in a skillet over medium-low heat. Grill each quesadilla for 2–3 minutes per side, or until golden brown and cheese is fully melted.
- Slice into wedges and serve warm, with extra sauce if desired.
Notes
- For extra melty cheese, cover the skillet with a lid while grilling.
- Swap chicken for steak or veggies if preferred!
- Store leftover sauce in an airtight container in the fridge for up to 5 days.
