Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, prick them with a fork, rub with olive oil and salt, then bake directly on the oven rack for 45–60 minutes until fork-tender.
  2. While potatoes bake, cook ground meat in a skillet over medium heat until browned. Drain excess fat if needed.
  3. Add chopped onion and garlic to the skillet and sauté for 2–3 minutes. Stir in taco seasoning and cook according to packet instructions (or with water if homemade).
  4. Once potatoes are done, carefully slice them open and fluff the insides with a fork.
  5. Fill each potato with taco meat, then top with cheese, sour cream, lettuce, tomatoes, and any additional toppings you love.
