Scale
Essential Ingredients:
- 2 tablespoons olive oil
- 2 pounds ground beef (or ground turkey)
- 1 yellow onion, finely diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 1 can (28 oz) diced fire-roasted tomatoes
- 2 cups low sodium beef broth
Optional Toppings:
- Shredded cheddar cheese
- Sliced jalapeños
- Sour cream
- Fresh cilantro
Instructions
- Heat oil: In a large pot or Dutch oven, heat olive oil over medium heat.
- Sauté vegetables: Add diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in minced garlic and cook for another minute.
- Brown the meat: Add ground beef or turkey. Cook until browned, breaking it apart with a spoon, about 8–10 minutes. Drain any excess fat.
- Add spices: Stir in chili powder and cook for 1 minute to bloom the spices.
- Add tomatoes and broth: Pour in fire-roasted tomatoes and beef broth. Stir well to combine.
- Simmer: Bring to a boil, then reduce heat and let simmer uncovered for 30–45 minutes, stirring occasionally, until thickened to your liking.
- Serve: Ladle into bowls and top with your favorite toppings like cheese, jalapeños, sour cream, and cilantro.
Notes
- For a spicier chili, add cayenne pepper or chipotle powder to taste.
- Chili gets even better after resting—consider making it a day ahead.
- Serve with cornbread or tortilla chips on the side for the ultimate meal.
