Description

Texas No Beans Chili is a hearty, meaty dish packed with bold flavors and just the right amount of heat. This no-bean version of classic chili is perfect for those who love a rich, thick chili that’s all about the meat, spices, and savory depth.

Ingredients

Scale

Essential Ingredients:

  • 2 tablespoons olive oil
  • 2 pounds ground beef (or ground turkey)
  • 1 yellow onion, finely diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 can (28 oz) diced fire-roasted tomatoes
  • 2 cups low sodium beef broth

Optional Toppings:

  • Shredded cheddar cheese
  • Sliced jalapeños
  • Sour cream
  • Fresh cilantro

Instructions

  1. Heat oil: In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Sauté vegetables: Add diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in minced garlic and cook for another minute.
  3. Brown the meat: Add ground beef or turkey. Cook until browned, breaking it apart with a spoon, about 8–10 minutes. Drain any excess fat.
  4. Add spices: Stir in chili powder and cook for 1 minute to bloom the spices.
  5. Add tomatoes and broth: Pour in fire-roasted tomatoes and beef broth. Stir well to combine.
  6. Simmer: Bring to a boil, then reduce heat and let simmer uncovered for 30–45 minutes, stirring occasionally, until thickened to your liking.
  7. Serve: Ladle into bowls and top with your favorite toppings like cheese, jalapeños, sour cream, and cilantro.

Notes

  • For a spicier chili, add cayenne pepper or chipotle powder to taste.
  • Chili gets even better after resting—consider making it a day ahead.
  • Serve with cornbread or tortilla chips on the side for the ultimate meal.
