  • 2 (5 ounce) cans tuna packed in olive oil
  • 2 ribs celery, chopped
  • 2 tablespoons lemon juice
  • 1/4 cup mayonnaise
  • 1/2 teaspoon sweet Hungarian paprika
  • Freshly ground black pepper, to taste
  • 1/4 to 1/3 head lettuce, preferably iceberg
  • Optional: Diced pickles or sweet relish
  • Optional: Chopped hard-boiled eggs

Instructions

  1. Bring 1 quart of water to a boil in a large pot. Add kosher salt and elbow macaroni. Cook until al dente, then drain and let cool.
  2. In a large mixing bowl, combine chopped green onion, bell pepper, parsley, celery, and tuna.
  3. In a small bowl, whisk together lemon juice, mayonnaise, sweet Hungarian paprika, and black pepper to create the dressing.
  4. Add the cooled macaroni to the vegetable and tuna mixture.
  5. Pour the dressing over the salad and mix gently until everything is evenly coated.
  6. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
  7. Just before serving, gently fold in chopped lettuce and any optional add-ons like pickles, eggs, corn, or olives.
