Shortbread Layer:
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- ½ cup granulated sugar

Caramel Layer:
- 1 can (14 oz) sweetened condensed milk
- ½ cup brown sugar
- ½ cup unsalted butter
- ¼ cup corn syrup (or pure maple syrup)
- 1 tsp vanilla extract
- Optional: ½ tsp sea salt
Chocolate Layer:
- 1½ cups semi-sweet chocolate chips
- 1 tbsp coconut oil or 2 tbsp heavy cream
Optional Add-Ins:
- Chopped pecans or almonds
- Flaky sea salt for garnish
- Crushed Twix bits for extra flair
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
- Make the shortbread layer: In a bowl, cream together butter and sugar until fluffy. Add vanilla and salt, then mix in flour until dough forms. Press into the bottom of prepared pan. Bake for 18–20 minutes or until golden. Cool completely.
- Prepare the caramel layer: In a saucepan over medium heat, combine condensed milk, brown sugar, butter, and corn syrup. Stir constantly until the mixture thickens and darkens slightly (about 8–10 minutes). Remove from heat, stir in vanilla and optional sea salt, and pour over the cooled shortbread. Chill for 1 hour.
- Make the chocolate layer: Melt chocolate chips with coconut oil or cream in a double boiler or microwave (20-second intervals, stirring between). Spread over chilled caramel layer.
- Optional: Top with crushed nuts, flaky sea salt, or crushed Twix. Chill until set, then cut into bars and serve.
Notes
- Store in an airtight container in the fridge for up to 1 week.
- For a crisp chocolate layer, use coconut oil. For a creamier finish, use heavy cream.
- Make it gluten-free by using a 1:1 gluten-free flour blend for the shortbread base.
