  • Coconut Milk – ¾ cup (177 ml), unsweetened; Thai Kitchen brand recommended

Optional Add-Ons:

  • 2 Tbsp maple syrup – for added sweetness
  • 1 tsp pure vanilla extract – to enhance flavor
  • ¼ tsp ground cinnamon – for a warm twist

Substitutions: Use frozen or canned peaches (no added sugar) if fresh are unavailable. Replace coconut milk with almond or oat milk for a lighter version. Swap maple syrup with agave or honey (if not strictly vegan).


Instructions

  1. Prepare Peaches: Wash, pit, and slice the peaches. Place them in a blender or food processor. Leave a few chunks if you prefer texture.
  2. Blend: Add coconut milk and any optional ingredients (maple syrup, vanilla, cinnamon). Blend until mostly smooth with some small peach pieces for texture.
  3. Fill Molds: Evenly pour the mixture into 6 popsicle molds. Tap the molds on the counter to release air bubbles.
  4. Freeze: Insert sticks (if applicable) and freeze for at least 6 hours, preferably overnight. If using loose sticks, insert them after 1–2 hours once partially frozen.
  5. Release Popsicles: To remove, submerge molds in warm water for 15–20 seconds or run under warm water. If too soft, return to freezer briefly before trying again.
