Description

Ingredients

  • 1/2 cup powdered sugar
  • 1/2 cup coconut oil, softened
  • 1/2 cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Soften the coconut oil at room temperature until scoopable.
  3. Cream the coconut oil and powdered sugar in a bowl until mostly smooth.
  4. Add the gluten-free flour gradually to form a soft dough, avoiding overmixing.
  5. Fold in the chopped nuts gently with a spatula.
  6. Shape the dough into 1-inch balls and place them on the prepared baking sheet.
  7. Bake for 12–15 minutes until lightly golden on the edges.
  8. Cool on the baking sheet for 5–8 minutes before transferring to a wire rack.
  9. Dust with additional powdered sugar once cool.
