Instructions

  1. Preheat: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Thaw Blueberries: Microwave or gently heat blueberries until soft and jammy (about 30 seconds to 2 minutes). Let cool.
  4. Cream Butter and Sugar: In a large mixing bowl, beat softened vegan butter and sugar until light and fluffy (about 2–3 minutes).
  5. Blend in Blueberries: Add thawed blueberries and continue mixing until well combined and the mixture turns purple.
  6. Combine Dough: Gradually fold in the flour mixture until just combined. Stir in white chocolate chips and any optional add-ins like oats or nuts.
  7. Chill: Cover the dough and place in the freezer for 30 minutes to firm up.
  8. Shape: Scoop or roll dough into 12 balls and place on the prepared baking sheet with space between each.
