- 8 oz linguine or fettuccine
- 1 cup fresh lobster meat, cooked and chopped
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Juice of 1 lemon
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
- Salt for the pasta water
- Reserved pasta water (about 1 cup)
Instructions
- Prep everything first: mince garlic, chop parsley, and measure cream.
- Cook the pasta until al dente in salted boiling water.
- Melt butter in a large skillet over medium heat, then sauté garlic until fragrant.
- Add cream and Parmesan to the skillet, stirring to form a thick sauce.
- Fold in the lobster and lemon juice, warming through.
- Combine the pasta with the sauce and adjust consistency with reserved pasta water.
Notes
For extra richness, finish with a knob of cold butter and grated Parmesan. Pair with a crisp salad and crusty bread.
