- 1 small cabbage, finely diced
- 1 cucumber, finely diced
- 1 bunch green onions, sliced
- 1 to 2 avocados
- 2 tbsp lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 cup fresh basil, chopped
- 1 cup spinach, chopped
- 1/3 cup nutritional yeast
- 1/4 cup cashews
- 1 cup cilantro, chopped
- 2 tbsp agave
- 1 tsp salt
- 1 tsp pepper
- Water, if needed
- Tortilla chips for serving
Instructions
- Grab a large bowl and toss together the finely diced cabbage, cucumber, and sliced green onions.
- In a blender or food processor, combine the avocados, lemon juice, olive oil, minced garlic, chopped basil, spinach, nutritional yeast, cashews, cilantro, agave, salt, and pepper. Blend until smooth, adding water if necessary.
- Pour that creamy dressing over the cabbage and cucumber mix, and toss everything thoroughly to combine.
- Transfer your colorful salad to a serving dish and sprinkle it with extra cilantro or basil for presentation. Serve with tortilla chips on the side.
