Cabbage Steaks in Creamy Mushroom and Onion Sauce

Description

A quick and forgiving recipe that combines the heartiness of cabbage with a rich creamy mushroom and onion sauce, perfect for busy weeknights.


Ingredients

  • 1 small head of green cabbage, cut into 2 thick steaks
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp vegan butter
  • 1 large onion, thinly sliced
  • 225 g (8 oz) mushrooms, sliced
  • 3 cloves garlic, minced
  • 240 ml (1 cup) oat cream
  • 120 ml (1/2 cup) water, plus more as needed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp vegan parmesan
  • 2 tbsp chili crisp
  • Extra vegan parmesan (to serve)
  • Extra chili crisp (to serve)
  • Fresh parsley, chopped (to serve)

Instructions

  1. Sear the cabbage: Heat olive oil in a large pan over medium heat. Season both sides of the cabbage steaks with salt and pepper. Sear for about 5-6 minutes on each side until they get a nice golden brown. Remove them from the pan and set aside.
  2. Caramelize the onions and mushrooms: In that same pan, add more olive oil and vegan butter. Toss in the sliced onions and mushrooms, cooking for about 10-12 minutes until they soften and caramelize. Stir in the minced garlic for the last minute of cooking.
  3. Prepare the creamy sauce: Pour in the oat cream and water. Add salt, black pepper, smoked paprika, garlic powder, onion powder, and chili crisp. Allow the mixture to simmer for 2-3 minutes to let it thicken slightly.
  4. Cook the cabbage steaks: Place the seared cabbage steaks back in the pan and cover it. Let them cook on low heat for 10-15 minutes, or if you prefer, bake them in a preheated oven at 350°F (180°C) for about 15-20 minutes until tender.
  5. Serve: Serve the cabbage steaks topped with your creamy sauce, extra vegan parmesan, a drizzle of chili crisp, and a sprinkle of fresh parsley.

Notes

Consider adding crushed red pepper flakes or fresh herbs for extra flavor. Using pre-sliced mushrooms can save time.
