Description

A family-friendly dip combining sweet caramelized pearl onions and creamy feta hummus, perfect for busy weeknight meals.


Ingredients

  • 400 g pearl onions (peeled)
  • 1 whole garlic bulb (peeled)
  • 60 ml olive oil, divided
  • 1 tsp salt, divided
  • 1/2 tsp black pepper, divided
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 400 g chickpeas (drained and rinsed)
  • 3 tbsp vegan yogurt (unsweetened)
  • 60 g vegan feta
  • 23 tbsp lemon juice
  • 23 tbsp cold water (as needed)
  • 1 tbsp tahini (optional)
  • Fresh parsley, finely chopped
  • Extra virgin olive oil (for drizzling)
  • Sourdough bread, sliced and toasted

Instructions

  1. Preheat the oven to 400°F (200°C). On a baking tray, arrange the pearl onions and garlic. Drizzle with 30 ml of olive oil, then sprinkle with 1/2 tsp salt, 1/4 tsp black pepper, smoked paprika, garlic powder, onion powder, and oregano. Toss to mix well and cover with foil. Roast for around 30-35 minutes, stirring halfway through.
  2. Prepare the hummus while the onions are roasting. In a food processor, combine the chickpeas, vegan yogurt, vegan feta, 30 ml olive oil, lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper. Blend until smooth, adding cold water as needed for consistency.
  3. Combine the hummus in a serving bowl, creating a well in the center. Top with the caramelized onions and garlic. Drizzle with hot sauce and extra virgin olive oil, if desired, and sprinkle with fresh parsley.
  4. Serve the dip warm with sliced, toasted sourdough bread.

Notes

Feel free to customize with additional toppings or veggies for dipping. This dip can be made ahead and stored in the fridge.
