  • 1 pound Italian sausage (casings removed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil, for garnish (optional)

  • Red pepper flakes, for heat
  • Spinach or kale (1–2 cups), added with the cream
  • 8 oz mushrooms, sliced and sautéed with the sausage

Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook, breaking it apart with a spatula, until browned and cooked through (about 6–8 minutes).
  3. Add diced onion and cook for 2–3 minutes until softened. Stir in garlic and cook for another 30 seconds until fragrant.
  4. Add the diced tomatoes (with their juices) and stir to combine.
  5. Reduce heat to low. Stir in the heavy cream and Italian seasoning. Simmer for 3–4 minutes to allow the flavors to blend.
  6. Add the cooked pasta to the sauce. Mix well to coat.
  7. Stir in mozzarella and Parmesan cheeses until melted and the sauce becomes creamy.
  8. Season with salt and pepper to taste. Garnish with fresh basil and optional red pepper flakes if desired.
  9. Serve hot and enjoy!

Notes

  • You can substitute penne with any short pasta like rotini, rigatoni, or fusilli.
