- 1/2 cup melted coconut oil (refined for no coconut flavor)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup coconut sugar (or regular sugar)
- 1/2 cup unsweetened almond milk (or milk of choice)
- 1/4 cup pure maple syrup
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups semi-sweet chocolate chips
Optional Add-Ons:
- Chopped walnuts or pecans
- Dried fruit (raisins, cranberries, coconut flakes)

Instructions
- Preheat oven to 350°F (175°C) and prepare granola bar molds or a baking dish, greasing if needed.
- In a large bowl, mash bananas until smooth.
- Add melted coconut oil, eggs, coconut sugar, vanilla, almond milk, and maple syrup. Whisk until combined.
- In a separate bowl, mix flour, cinnamon, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, stirring until just combined.
- Fold in chocolate chips gently.
- Portion batter into molds or spread evenly in baking dish.
- Bake 25–30 minutes, or until a toothpick inserted comes out clean.
- Cool in molds for 10 minutes, then transfer to a wire rack to cool completely before serving.
Notes
- Gluten-free flour can replace all-purpose flour.
- For vegan version, replace eggs with flax eggs or applesauce.
- Honey or agave can be used instead of maple syrup, but flavor will vary.
- Store in an airtight container for up to 4 days, or freeze for longer storage.
