Description

Quick and easy Corn Fritters that are perfect for busy weeknights and loved by both kids and adults.


Ingredients

  • 2 cups fresh corn kernels (or canned/frozen, drained)
  • 1 cup all-purpose flour
  • 3 tablespoons cornstarch
  • 1 cup water
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • Salt and pepper to taste
  • Oil for frying
  • Optional: Chopped bell peppers or zucchini
  • Optional: Chopped cilantro or parsley
  • Optional: Nutritional yeast
  • Optional: Spices like smoked paprika or chili powder

Instructions

  1. Mix together the all-purpose flour and cornstarch in a large mixing bowl.
  2. Gradually stir in the water until you achieve a thick batter.
  3. Add in the corn, green onions, garlic, ground coriander, turmeric, salt, and pepper. Give it a good mix.
  4. Heat oil in a skillet over medium heat – it’s ready when a drop of batter sizzles.
  5. Use a spoon to drop dollops of batter into the hot oil, flattening them slightly as you go.
  6. Cook each fritter for about 3-4 minutes per side until they turn a lovely golden brown.
  7. Remove the cooked fritters and place them on paper towels to soak up any extra oil.
  8. Serve those delicious fritters hot with your favorite dipping sauce.
