- 2 cups fresh corn kernels (or canned/frozen, drained)
- 1 cup all-purpose flour
- 3 tablespoons cornstarch
- 1 cup water
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- Salt and pepper to taste
- Oil for frying
- Optional: Chopped bell peppers or zucchini
- Optional: Chopped cilantro or parsley
- Optional: Nutritional yeast
- Optional: Spices like smoked paprika or chili powder
Instructions
- Mix together the all-purpose flour and cornstarch in a large mixing bowl.
- Gradually stir in the water until you achieve a thick batter.
- Add in the corn, green onions, garlic, ground coriander, turmeric, salt, and pepper. Give it a good mix.
- Heat oil in a skillet over medium heat – it’s ready when a drop of batter sizzles.
- Use a spoon to drop dollops of batter into the hot oil, flattening them slightly as you go.
- Cook each fritter for about 3-4 minutes per side until they turn a lovely golden brown.
- Remove the cooked fritters and place them on paper towels to soak up any extra oil.
- Serve those delicious fritters hot with your favorite dipping sauce.
