  • 68 jumbo shrimp (peeled and deveined, chopped)
  • 1 cup lump crab meat
  • 2 tbsp cream cheese (softened)
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 clove garlic (minced)
  • 1 tbsp fresh parsley or thyme (chopped)
  • 1 tbsp lemon juice
  • Salt and pepper (to taste)
  • 1 tbsp olive oil
  • Lemon wedges (for serving)

Instructions

  1. Preheat oven: Set your oven to 375°F (190°C).
  2. Prepare the stuffing: In a bowl, mix chopped shrimp, lump crab meat, cream cheese, mayonnaise, Dijon mustard, minced garlic, parsley or thyme, lemon juice, and salt and pepper. Mix until fully combined.
  3. Stuff the salmon: Open the butterflied salmon fillet and spread the stuffing mixture evenly inside. Fold the top layer of salmon over the stuffing to close it.
  4. Optional topping: If using, sprinkle the stuffed salmon with grated Parmesan, chili flakes, or breadcrumbs.
  5. Sear the salmon: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed salmon for 2–3 minutes on each side until lightly golden.
  6. Bake: Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve: Garnish with fresh lemon wedges and serve hot with your favorite sides.
