- Toothpicks or kitchen twine (for securing)
Instructions
- Preheat the oven to 375°F (190°C).
- Carefully slice a pocket into the side of each chicken breast without cutting all the way through.
- Stuff each pocket with 1 oz of Brie cheese and about 2 tablespoons of cranberry sauce.
- Secure the openings with toothpicks or kitchen twine.
- Season the outside of the chicken breasts with garlic powder, thyme, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the chicken for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temp 165°F or 74°C).
- Remove from oven, let rest for a few minutes, then remove toothpicks or twine before serving.

- You can use homemade or store-bought cranberry sauce, but whole berry works best for texture.
- Make sure to secure the chicken well to prevent the filling from leaking out.
