  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Toothpicks or kitchen twine (for securing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Carefully slice a pocket into the side of each chicken breast without cutting all the way through.
  3. Stuff each pocket with 1 oz of Brie cheese and about 2 tablespoons of cranberry sauce.
  4. Secure the openings with toothpicks or kitchen twine.
  5. Season the outside of the chicken breasts with garlic powder, thyme, salt, and pepper.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear the chicken for 2-3 minutes on each side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temp 165°F or 74°C).
  9. Remove from oven, let rest for a few minutes, then remove toothpicks or twine before serving.

  • You can use homemade or store-bought cranberry sauce, but whole berry works best for texture.
