- 1/2 cup red chili flakes
- 4 tbsp toasted sesame seeds
- 1 tbsp crushed Sichuan peppercorns
- 3 garlic cloves, minced
- Small handful of fresh cilantro, finely chopped
- Small handful of spring onion greens, thinly sliced
- 1/3 cup roasted peanuts, lightly crushed
- 1 tbsp granulated sugar
- 1 tbsp fine salt
- 2 cups avocado oil
- 3 tbsp light soy sauce
- 2 tbsp unseasoned rice vinegar
Instructions
- In a heat-proof bowl, combine the red chili flakes, toasted sesame seeds, Sichuan peppercorns, minced garlic, cilantro, spring onion, crushed peanuts, sugar, and salt. Give it a good mix.
- In a small saucepan, heat the avocado oil over medium heat until it reaches about 190 degrees Celsius (375 degrees Fahrenheit).
- Carefully pour the hot oil over the spice mixture in the bowl and gently stir to coat everything well.
- Let it cool slightly for a moment, then stir in the light soy sauce and rice vinegar continuously until well combined.
- Keep stirring until it reaches a warm temperature, then pour it into a clean jar, ensuring all solids are submerged. Allow it to cool to room temperature before sealing it up.
Notes
Store in an airtight jar in the refrigerator for up to two months. Adjust spice level to suit picky eaters.
