Ingredients
- Pimento Stuffed Olives (5.5 oz / 155 g)
- All-Purpose Flour (1/2 cup / 60 g, divided)
- Cold Water (1/4 cup / 60 ml)
- Paprika (1 tsp)
- Garlic Powder (1/2 tsp)
- Black Pepper (1/2 tsp)
- Panko Breadcrumbs (1/2 cup)
- Oil for Frying (Canola or Vegetable)
- Vegan Mayonnaise (1/3 cup / 75 g)
- Lemon Juice (1 tbsp)
- Minced Garlic (1 heaping tbsp)
- Salt and Pepper to taste
- Nutritional Yeast (optional)
- Chili Flakes (optional)
- Fresh Herbs (optional)
Instructions
- Make the Aioli: In a small bowl, mix together the vegan mayonnaise, lemon juice, minced garlic, salt, and pepper. Stir until smooth. Store it in the fridge to chill while you prepare the olives.
- Prepare the Batter: In a separate bowl, whisk together half of the flour with cold water, paprika, garlic powder, and black pepper. Aim for a lump-free, smooth consistency.
- Set Up Your Breading Station: Lay out three shallow bowls: one for the remaining flour, one for panko breadcrumbs, and the last for your batter.
- Coat the Olives: Dip each olive in the dry flour, then into the batter, and finally coat it well with panko breadcrumbs. Place them aside until you’re ready to fry.
- Heat the Oil: In a Dutch oven, heat the oil to 325-350°F (170-180°C).
- Fry in Batches: Carefully add the coated olives into the hot oil and fry them for 1-2 minutes until they achieve a golden brown and crispy texture.
- Drain and Serve: Remove the fried olives and let them drain on a plate lined with paper towels. Serve hot with your chilled garlic aioli.
