Ingredients

  • Pimento Stuffed Olives (5.5 oz / 155 g)
  • All-Purpose Flour (1/2 cup / 60 g, divided)
  • Cold Water (1/4 cup / 60 ml)
  • Paprika (1 tsp)
  • Garlic Powder (1/2 tsp)
  • Black Pepper (1/2 tsp)
  • Panko Breadcrumbs (1/2 cup)
  • Oil for Frying (Canola or Vegetable)
  • Vegan Mayonnaise (1/3 cup / 75 g)
  • Lemon Juice (1 tbsp)
  • Minced Garlic (1 heaping tbsp)
  • Salt and Pepper to taste
  • Nutritional Yeast (optional)
  • Chili Flakes (optional)
  • Fresh Herbs (optional)

Instructions

  1. Make the Aioli: In a small bowl, mix together the vegan mayonnaise, lemon juice, minced garlic, salt, and pepper. Stir until smooth. Store it in the fridge to chill while you prepare the olives.
  2. Prepare the Batter: In a separate bowl, whisk together half of the flour with cold water, paprika, garlic powder, and black pepper. Aim for a lump-free, smooth consistency.
  3. Set Up Your Breading Station: Lay out three shallow bowls: one for the remaining flour, one for panko breadcrumbs, and the last for your batter.
  4. Coat the Olives: Dip each olive in the dry flour, then into the batter, and finally coat it well with panko breadcrumbs. Place them aside until you’re ready to fry.
  5. Heat the Oil: In a Dutch oven, heat the oil to 325-350°F (170-180°C).
  6. Fry in Batches: Carefully add the coated olives into the hot oil and fry them for 1-2 minutes until they achieve a golden brown and crispy texture.
  7. Drain and Serve: Remove the fried olives and let them drain on a plate lined with paper towels. Serve hot with your chilled garlic aioli.

Notes

For best results, avoid overcrowding the frying pan. Customize flavors with optional add-ons to appeal to picky eaters.
