A quick and easy recipe for crispy broccoli chips that kids and adults will love, perfect for busy families.

- 2 medium heads of broccoli, cut into florets
- 2 tbsp olive oil
- 1 tbsp cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/4 cup vegan parmesan cheese
- Salt and pepper to taste
- 1/2 cup dairy-free yogurt
- 1 tbsp lemon juice
- 1 tsp dried dill
Instructions
- Bring a large pot of salted water to a gentle boil. Add the broccoli florets and boil them for about 5-6 minutes until they are just tender. Drain the broccoli and pat the florets dry.
- On a parchment-lined baking sheet, arrange the florets and gently press each one down to smash them.
- In a bowl, mix together the olive oil, cornstarch, garlic powder, onion powder, smoked paprika, vegan parmesan, salt, and pepper until well combined.
- Brush the seasoning mixture onto both sides of the smashed broccoli florets.
- Preheat your oven to 425°F (220°C) and bake the broccoli for 20-25 minutes, flipping halfway through until they are crispy.
- While the broccoli is baking, prepare the dipping sauce by whisking together the dairy-free yogurt, lemon juice, and dried dill.
- Once the broccoli chips are baked to golden perfection, serve them warm with the yogurt dipping sauce.
Notes
Use pre-cut broccoli florets for a quicker prep. You can substitute vegan parmesan with regular parmesan if desired.
