Description

A quick and easy recipe for crispy broccoli chips that kids and adults will love, perfect for busy families.


Ingredients

  • 2 medium heads of broccoli, cut into florets
  • 2 tbsp olive oil
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/4 cup vegan parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup dairy-free yogurt
  • 1 tbsp lemon juice
  • 1 tsp dried dill

Instructions

  1. Bring a large pot of salted water to a gentle boil. Add the broccoli florets and boil them for about 5-6 minutes until they are just tender. Drain the broccoli and pat the florets dry.
  2. On a parchment-lined baking sheet, arrange the florets and gently press each one down to smash them.
  3. In a bowl, mix together the olive oil, cornstarch, garlic powder, onion powder, smoked paprika, vegan parmesan, salt, and pepper until well combined.
  4. Brush the seasoning mixture onto both sides of the smashed broccoli florets.
  5. Preheat your oven to 425°F (220°C) and bake the broccoli for 20-25 minutes, flipping halfway through until they are crispy.
  6. While the broccoli is baking, prepare the dipping sauce by whisking together the dairy-free yogurt, lemon juice, and dried dill.
  7. Once the broccoli chips are baked to golden perfection, serve them warm with the yogurt dipping sauce.

Notes

Use pre-cut broccoli florets for a quicker prep. You can substitute vegan parmesan with regular parmesan if desired.
