Description

These Healthy Homemade Fruit Snacks (with Veggies!) are naturally sweet, chewy, and packed with fruits and hidden veggies. Using real fruit, a touch of honey, and grass-fed gelatin, these snacks are a fun and nutritious alternative to store-bought gummies — perfect for kids and adults alike.


Ingredients

  • 1 1/2 cups diced mango chunks (fresh or thawed if frozen)
  • 1 medium carrot, steamed until soft
  • 2 tbsp honey
  • 1/4 cup water
  • 5 tbsp grass-fed beef gelatin powder
  • 2 cups halved strawberries (fresh or thawed if frozen)
  • 1 small beet, steamed until soft
  • 2 tbsp honey
  • 1/4 cup water
  • 5 tbsp grass-fed beef gelatin powder

Optional Add-Ons:

  • Other fruits: blueberries, raspberries, kiwi
  • Citrus juice: splash of orange or lemon juice
  • Herbs: pinch of mint or basil

Instructions

  1. Line a 9-inch loaf pan with parchment paper and lightly spray with coconut oil cooking spray.
  2. In a high-speed blender, combine mango chunks, steamed carrot, strawberries, and steamed beet.
  3. Add the water and honey. Blend on high until completely smooth (about 5 minutes).
  4. Taste the puree and adjust sweetness if desired.
  5. Pour the puree into a large-bottomed stock pot. Sprinkle the gelatin evenly over the top and let it bloom for 5 minutes.
  6. Whisk the gelatin into the mixture. Heat gently over medium heat, whisking constantly, until smooth (do not boil).
  7. Pour the mixture into the prepared pan, cover, and refrigerate for 3–4 hours (or overnight) until firm.
  8. Remove from the pan and cut into fun shapes using mini cutters or slice into small squares.
  9. Store in an airtight container in the refrigerator for up to 5 days.

Notes

  • Vegan option: Use agar-agar instead of gelatin (setting texture may vary).
  • Sweetener swaps: Maple syrup or agave nectar can replace honey.
  • Storage tip: These gummies keep best refrigerated — they’ll soften if left out at room temperature.
