Description

Ingredients

  • ½ cup red seedless grapes, halved or quartered

  • ⅓ cup candied walnuts
  • Dried cranberries or cherries (optional)

  • Avocado slices (optional)

Instructions

  1. Prepare the Candied Walnuts:
    • Line a baking sheet with parchment paper.
    • Toast the walnuts in a small pan over medium heat for about 4 minutes.
    • Make the candied mixture with butter, sugar, and salt until bubbly.
    • Add toasted walnuts and mix for about 2 minutes before transferring to the baking sheet to cool.
  2. Prepare the Lemon Vinaigrette:
    • Combine garlic, lemon zest, lemon juice, Dijon mustard, and honey.
    • Emulsify by gradually whisking in olive oil and season to taste.
  3. Assemble the Salad:
    • Toss the arugula with the lemon vinaigrette.
    • Layer half of the arugula, grapes, goat cheese, and walnuts on a plate.
    • Serve immediately for the freshest flavors.

Notes

For easy preparation, store-bought candied walnuts can be used and goat cheese can be substituted with feta.
