  • 1 fresh pineapple (peeled, cored, and sliced into rings or spears)
  • 1/4 cup butter, melted
  • 1/4 cup dark brown sugar
  • 1/4 cup dark rum (optional)
  • 1 teaspoon ground cinnamon
  • Pinch of salt

  • Toasted coconut flakes
  • Vanilla ice cream (for serving)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your grill to medium heat and lightly oil the grates.
  2. In a small bowl, mix the melted butter, brown sugar, rum (if using), cinnamon, and salt until well combined.
  3. Brush the pineapple slices generously with the butter mixture.
  4. Place the pineapple on the grill and cook for 2–3 minutes per side, or until grill marks form and the edges begin to caramelize.
  5. Remove from the grill and brush with any remaining butter mixture.
