Description

Delicious Hawaiian Chicken Kebabs combining juicy chicken and sweet pineapple with a savory glaze, perfect for weeknight meals or outdoor grilling.


Ingredients

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 1 pound chicken breast, cut into 1– to 1.5-inch cubes
  • 23 bell peppers, cut into 1.5-inch squares
  • 1 can (about 20 ounces) pineapple chunks, drained
  • Skewers (metal or soaked wooden)
  • 1 small red onion, cut into wedges (optional)
  • 1 tablespoon rice vinegar or lime juice (optional)
  • 1 clove garlic, minced (optional)
  • 1/2 teaspoon ground ginger or 1 teaspoon fresh grated ginger (optional)
  • Sesame seeds and chopped green onions for garnish (optional)
  • Chili flakes or sriracha for heat (optional)

Instructions

  1. Prep your ingredients by cutting the chicken and vegetables into even pieces.
  2. Make the marinade by whisking together ketchup, brown sugar, soy sauce, and pineapple juice until smooth.
  3. Marinate the chicken in a sealable bag or dish by pouring two-thirds of the marinade over it. Let it soak for at least 30 minutes.
  4. Preheat your grill to medium-high heat, cleaning and oiling the grates.
  5. Assemble the skewers by threading chicken, bell peppers, and pineapple chunks in an alternating pattern.
  6. Grill the kebabs for 10–15 minutes, turning every 2–3 minutes, basting with reserved marinade.
  7. Rest the skewers for 3–5 minutes before serving.

Notes

Ensure to leave space between pieces on the skewer for even cooking. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
