A refreshing and vibrant salad combining juicy fruits and succulent shrimp, perfect for warm days or casual gatherings.

- 6 – 9 large shell-on shrimps (16 – 20 counts)
- 1 cup seedless grapes (rinsed & pat dried)
- 1 large honey crisp apple (peeled & cut into ¾-inch cubes)
- 2 medium ripe Ataulfo mangoes (removed peel & cut into ¾-inch cubes)
- ¼ cup Miracle Whip (plus more for plating)
- Salt to taste
- A handful of toasted almonds or walnuts (optional)
- A sprinkle of lime juice (optional)
- Mint leaves (optional)
Instructions
- Prepare the shrimp by keeping the shells on for maximum flavor.
- Devein the shrimp by making a slit along the back to expose the vein. Remove the vein and rinse under cold water.
- Boil water in a medium pot and season it with salt. Add the shrimp and cook until they turn bright pink and opaque, about 1½ to 2 minutes.
- Chill the cooked shrimp in a bowl of iced water for about 2 minutes. Once cooled, remove the shells but keep the tails on if desired.
- Prepare the fruits by cutting grapes in half and cubing the apples and mangoes.
- Combine the cubed fruits and Miracle Whip in a large mixing bowl and toss gently until coated.
- Fold in the cubed mangoes and let the salad chill in the fridge for 20 to 30 minutes.
- Serve the salad on a platter, garnishing with additional Miracle Whip and arranging the shrimp on top. Enjoy!
Notes
For a personal touch, consider adding lime juice, nuts, or mint leaves. This salad is easy to prepare ahead of time and is perfect for meal prep.
