Description

A comforting and forgiving recipe featuring thinly sliced beef marinated in a sweet and savory mixture served over steaming rice.


Ingredients

  • 1 lb beef sirloin or ribeye, thinly sliced
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp rice vinegar
  • Rice for serving (short-grain or jasmine)
  • Green onions or sesame seeds for topping
  • Optional: Julienned carrots or cucumber
  • Optional: Quick kimchi
  • Optional: Fried egg or soft-boiled egg
  • Optional: Sautéed spinach or baby kale
  • Optional: Gochujang or chili flakes

Instructions

  1. Prepare the beef by placing it in the freezer for 30–45 minutes until slightly firm, then slice against the grain into 1/8–1/4-inch strips.
  2. Make the marinade by combining soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and rice vinegar in a bowl. Stir until sugar is dissolved.
  3. Marinate the beef in the marinade for 30 minutes to 2 hours.
  4. Cook the rice according to package instructions, keeping covered until serving.
  5. Heat a skillet or grill over medium-high heat. Add oil if using a pan.
  6. Cook the beef in batches for 2–4 minutes until browned, avoiding overcrowding.
  7. Rest the beef for 1–2 minutes after cooking.
  8. Assemble by placing rice in bowls and stacking beef on top. Add toppings of your choice.
  9. Serve immediately with optional sauces and garnishes.

Notes

Keep heat high for searing and avoid overcrowding the pan for best results.
