- 1 lb beef sirloin or ribeye, thinly sliced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp rice vinegar
- Rice for serving (short-grain or jasmine)
- Green onions or sesame seeds for topping
- Optional: Julienned carrots or cucumber
- Optional: Quick kimchi
- Optional: Fried egg or soft-boiled egg
- Optional: Sautéed spinach or baby kale
- Optional: Gochujang or chili flakes
Instructions
- Prepare the beef by placing it in the freezer for 30–45 minutes until slightly firm, then slice against the grain into 1/8–1/4-inch strips.
- Make the marinade by combining soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and rice vinegar in a bowl. Stir until sugar is dissolved.
- Marinate the beef in the marinade for 30 minutes to 2 hours.
- Cook the rice according to package instructions, keeping covered until serving.
- Heat a skillet or grill over medium-high heat. Add oil if using a pan.
- Cook the beef in batches for 2–4 minutes until browned, avoiding overcrowding.
- Rest the beef for 1–2 minutes after cooking.
- Assemble by placing rice in bowls and stacking beef on top. Add toppings of your choice.
- Serve immediately with optional sauces and garnishes.

Keep heat high for searing and avoid overcrowding the pan for best results.
