Instructions
- Gather and measure everything first.
- Zest the lemon, then cut and juice it.
- Combine the dry base: oats and optional add-ins in a mixing bowl.
- Mix the wet ingredients in a separate bowl.
- Pour the wet mixture over the oats and stir until combined.
- Check the texture and adjust with lemon juice or oats if needed.
- Use a tablespoon to scoop and shape the cookies.
- Chill in the refrigerator for at least 30 minutes.
- Finish and dust with powdered sugar or add extra chocolate chips if desired.
