Description

Quick and delicious Loaded Twice Baked Potato Skins, perfect for busy weeknights and loved by the whole family.


Ingredients

  • 6 medium baking potatoes
  • 2 tbsp olive oil
  • Vegetable oil (for frying)
  • 2 large onions, sliced thin
  • 2 tbsp olive oil (for caramelizing onions)
  • 1 pinch salt
  • 120 g vegan cream cheese
  • 250 ml vegan béchamel sauce
  • 150 g vegan shredded cheese
  • Fresh parsley (for filling and garnish)
  • 1 tsp brown sugar (optional)
  • 2 tbsp fresh parsley (finely chopped)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1 tsp salt (or to taste)
  • Fresh parsley (for garnish)
  • Vegan parmesan (for garnish)
  • Chili flakes (for garnish)
  • Vegan sour cream (for serving)

Instructions

  1. Preheat your oven to 200 degrees C (400 degrees F). Wash and dry the baking potatoes, prick them with a fork, rub with olive oil, and sprinkle with salt. Bake until tender, about 50-60 minutes, then let cool.
  2. Heat olive oil in a pan over medium-low heat. Add the sliced onions and a pinch of salt, cooking until caramelized, about 25-30 minutes. Add brown sugar in the last 5 minutes if desired.
  3. Cut the cooled potatoes in half lengthwise and scoop out the flesh, keeping the skins intact.
  4. Heat vegetable oil in a frying pan and fry the potato skins for 2-3 minutes on each side until crispy. Drain on paper towels.
  5. Mix the scooped-out potato flesh with caramelized onions, vegan cream cheese, parsley, smoked paprika, garlic powder, onion powder, black pepper, and salt until creamy but still slightly textured.
  6. Fill each potato skin with the mixture, drizzle with vegan béchamel, and sprinkle with vegan cheese.
  7. Bake again for about 15-18 minutes until the cheese melts. Broil for 2 minutes for a bubbly top.
  8. Garnish with fresh parsley, vegan parmesan, and chili flakes. Serve with vegan sour cream.
