  • 3 tablespoons olive oil
  • 50 g (1/4 cup) grated Parmesan cheese
  • Fresh basil leaves, to taste
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Baby spinach (optional)
  • Sliced olives or capers (optional)
  • Extra-virgin olive oil (optional)
  • Breadcrumbs for topping (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package directions, reserving 1 cup of pasta water, then drain.
  3. Heat olive oil in a skillet over medium heat and sauté the chopped onion until soft.
  4. Add minced garlic and cook until fragrant.
  5. Pour in canned whole tomatoes and season with salt, black pepper, and red pepper flakes.
  6. Simmer the sauce for 15–20 minutes, stirring occasionally.
  7. Stir in the drained pasta and toss to coat.
  8. Add diced mozzarella and any optional ingredients (e.g., spinach).
