Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup maple syrup or honey
  • 1/2 cup dark chocolate chips
  • 12 tablespoons mini chocolate chips (optional)
  • 1/4 teaspoon flaky sea salt (optional)
  • 1 tablespoon unsweetened cocoa powder (optional)
  • 2 tablespoons ground flaxseed or chia seeds (optional)
  • 1/4 cup chopped peanuts or almonds (optional)
  • 1/4 cup dried fruit (optional)
  • A few drops of vanilla extract (optional)

Instructions

  1. Gather and measure everything first.
  2. Combine the oat base: In a medium bowl, add 1 cup rolled oats, 1/2 cup creamy peanut butter, and 1/4 cup maple syrup or honey. Mix until sticky.
  3. Prepare your muffin tin: Line a 12-cup muffin tin with paper liners or use a silicone mold.
  4. Portion and press the base: Spoon the mixture into each liner, pressing firmly.
  5. Melt the chocolate: Microwave dark chocolate chips until smooth, adding coconut oil if needed.
  6. Top the cups with melted chocolate.
  7. Chill to set: Place in fridge for at least 15 minutes or in the freezer for 5–8 minutes.
  8. Remove and enjoy: Lift the cups out and store leftovers in an airtight container.
