Description

Instructions

  1. Preheat oven: Set your oven to 325°F (160°C). Line an 8×8-inch or 9×9-inch baking pan with parchment paper or lightly grease it.
  2. Make the crust: In a bowl, combine graham cracker crumbs and melted butter. Press the mixture evenly into the bottom of the prepared pan. Bake for 8–10 minutes, then let cool slightly.
  3. Prepare the cheesecake layer: In a large mixing bowl, beat softened cream cheese until smooth. Add sugar and vanilla, mixing until well combined. Beat in the eggs one at a time, followed by sour cream until fully incorporated.
  4. Assemble and bake: Pour the cream cheese mixture over the crust. Spread evenly. Bake for 35–40 minutes, or until the center is set but still slightly jiggly.
  5. Cool and chill: Let the cheesecake bars cool at room temperature, then refrigerate for at least 3 hours (or overnight) before slicing.
  6. Serve: Top with fresh fruit, drizzle with sauce, or sprinkle with chocolate chips or nuts as desired. Cut into bars and enjoy!
