- 1/2 cup Fairlife skim milk
- 1 cup unsweetened almond milk
- 1/2 cup light coconut milk
- 1 scoop vanilla protein powder
- 1 tablespoon vanilla Jell-O pudding mix
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup unsweetened shredded coconut
- 2 tablespoons semi-sweet chocolate chips
- 1/2 teaspoon coconut oil
Instructions
- Combine ingredients in a Ninja Creami container – Fairlife skim milk, unsweetened almond milk, light coconut milk, vanilla protein powder, Jell-O pudding mix, vanilla extract, and salt.
- Freeze the mixture in the container for at least 24 hours.
- Churn the ice cream using the Ninja Creami machine set to ‘Lite Ice Cream’ after thawing slightly.
- Re-churn if necessary by reinserting into the machine for a better consistency.
- Add coconut flakes by making a well in the ice cream and using the ‘Mix-in’ button.
- Prepare the chocolate topping by melting semi-sweet chocolate chips and coconut oil in the microwave.
- Refreeze the ice cream to harden the chocolate shell before serving.
Notes
Ensure the mixture is completely frozen before churning, and allow it to thaw slightly to achieve a creamy texture.
