Description

A healthy and delicious homemade ice cream packed with protein, shredded coconut, and a chocolate topping, perfect for satisfying your sweet tooth without guilt.


Ingredients

Scale
  • 1/2 cup Fairlife skim milk
  • 1 cup unsweetened almond milk
  • 1/2 cup light coconut milk
  • 1 scoop vanilla protein powder
  • 1 tablespoon vanilla Jell-O pudding mix
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons semi-sweet chocolate chips
  • 1/2 teaspoon coconut oil

Instructions

  1. Combine ingredients in a Ninja Creami container – Fairlife skim milk, unsweetened almond milk, light coconut milk, vanilla protein powder, Jell-O pudding mix, vanilla extract, and salt.
  2. Freeze the mixture in the container for at least 24 hours.
  3. Churn the ice cream using the Ninja Creami machine set to ‘Lite Ice Cream’ after thawing slightly.
  4. Re-churn if necessary by reinserting into the machine for a better consistency.
  5. Add coconut flakes by making a well in the ice cream and using the ‘Mix-in’ button.
  6. Prepare the chocolate topping by melting semi-sweet chocolate chips and coconut oil in the microwave.
  7. Refreeze the ice cream to harden the chocolate shell before serving.

Notes

Ensure the mixture is completely frozen before churning, and allow it to thaw slightly to achieve a creamy texture.
