  • 1/2 cup canned pumpkin puree
  • 1/3 cup bread crumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried sage (optional)
  • Fresh sage leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, pumpkin puree, breadcrumbs, chopped onion, minced garlic, egg, salt, pepper, and dried sage. Mix thoroughly.
  3. Shape the mixture into small meatballs, about 1 inch in diameter, and arrange them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. While the meatballs are baking, heat olive oil and butter in a large skillet over medium heat.
