Ingredients

- 1 large head cauliflower
- 2 heads garlic
- 5 tbsp olive oil
- Salt and pepper to taste
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp ground cumin
- 1/4 tsp turmeric (optional)
- 400 g (15 oz) chickpeas (optional)
- 4 tbsp tahini (optional)
- 1 lemon, juice only (optional)
- Water, as needed
- Fresh parsley, chopped (for garnish)
- Chili oil (for drizzling, optional)
Instructions
- Start by preheating your oven to 400°F (200°C). While it warms, cut the cauliflower into 1-inch thick steaks and arrange them on a lined baking sheet.
- Mix together your olive oil, salt, pepper, smoked paprika, garlic powder, cumin, and optional turmeric. Drizzle this flavorful blend over the cauliflower steaks.
- Roast the cauliflower in the oven for 25-30 minutes, or until the steaks are tender and golden brown.
- Squeeze the roasted garlic from its skins and blend it with chickpeas, tahini, lemon juice, salt, and pepper until smooth.
- Spread the homemade hummus on a plate, layer the roasted cauliflower steaks on top, and finish with parsley and chili oil if using.
Notes
Keep an eye on the cauliflower to avoid overcooking. Roasted garlic adds depth to the dip.
