Description

An easy and quick savory zucchini tart that pleases both kids and adults, perfect for chaotic weeknights.


Ingredients

  • 3 medium zucchinis, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 tsp salt
  • 1 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 to 3/4 cup water
  • Olive oil
  • Fresh basil for topping
  • Nutritional yeast (optional)
  • Chopped garlic or garlic powder (optional)
  • Spinach or kale (optional)

Instructions

  1. Combine the sliced zucchini and red onion in a large bowl, sprinkle with salt, and let them sit for 10-15 minutes.
  2. Drain the excess liquid using a sieve or colander.
  3. Mix the reserved liquid with the all-purpose flour and cornmeal in the same bowl.
  4. Add enough water until you achieve a smooth batter.
  5. Fold the drained vegetables into the batter until well combined.
  6. Preheat your oven to 200 degrees C (390 degrees F) and grease a baking tray with olive oil.
  7. Pour the batter into the prepared tray and drizzle a bit more olive oil on top.
  8. Bake for 35-45 minutes or until golden brown and crispy on the edges.
  9. Let it cool slightly, then top with fresh basil before serving.

Notes

You can use store-bought dough for a quicker preparation. For a gluten-free option, substitute all-purpose flour with a gluten-free blend.
