- 3 medium zucchinis, thinly sliced
- 1/2 red onion, thinly sliced
- 1 tsp salt
- 1 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 to 3/4 cup water
- Olive oil
- Fresh basil for topping
- Nutritional yeast (optional)
- Chopped garlic or garlic powder (optional)
- Spinach or kale (optional)
Instructions
- Combine the sliced zucchini and red onion in a large bowl, sprinkle with salt, and let them sit for 10-15 minutes.
- Drain the excess liquid using a sieve or colander.
- Mix the reserved liquid with the all-purpose flour and cornmeal in the same bowl.
- Add enough water until you achieve a smooth batter.
- Fold the drained vegetables into the batter until well combined.
- Preheat your oven to 200 degrees C (390 degrees F) and grease a baking tray with olive oil.
- Pour the batter into the prepared tray and drizzle a bit more olive oil on top.
- Bake for 35-45 minutes or until golden brown and crispy on the edges.
- Let it cool slightly, then top with fresh basil before serving.
Notes
You can use store-bought dough for a quicker preparation. For a gluten-free option, substitute all-purpose flour with a gluten-free blend.
