  • ¾ English cucumber (peeled and diced)
  • 5 ounces baby romaine or romaine
  • Dash of red pepper flakes (optional)
  • 3 tablespoons vegetable oil (for dressing)
  • 3 tablespoons lime juice
  • 2 tablespoons honey
  • 1½ tablespoons white miso
  • ¼ teaspoon salt

Instructions

  1. Prepare the Dressing: In a small bowl, combine the vegetable oil, lime juice, honey, white miso, and salt. Whisk until smooth and adjust to taste.
  2. Cook the Shrimp: Heat a medium pan over medium-high heat and add the butter. Once melted, add the garlic and cook for about a minute. Add the shrimps and red pepper flakes, cooking for 2-3 minutes on each side until pink and golden.
  3. Assemble the Salad: In serving bowls, lay down the baby romaine and top with the sautéed shrimps, diced avocado, and cucumber.
