Description

A vibrant salad packed with chickpeas, fresh greens, and a tangy yogurt dressing, perfect for any occasion.


Ingredients

Scale
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 2 cups baby spinach
  • 2 cups baby kale
  • 1 head broccoli, cut into florets
  • 1/2 bunch asparagus, cut into small pieces
  • 1 avocado, sliced or cubed
  • 1/2 cup plain Greek yogurt
  • 2 Tbsp horseradish mustard
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Optional: Cherry tomatoes, cucumber, red onion or scallions

Instructions

  1. Drain and wash the chickpeas. Rinse them under cold water to remove canning liquid.
  2. Mix the chickpeas with salt, pepper, and oregano in a bowl.
  3. In a large salad bowl, layer baby spinach, baby kale, broccoli florets, and asparagus. Add the seasoned chickpeas and gently mix.
  4. In a small bowl, combine Greek yogurt and horseradish mustard. Add water for desired consistency and season to taste.
  5. Dress the salad with the yogurt dressing and toss until evenly coated.
  6. Serve and enjoy your Simple Green Goodness Chickpea Salad!

Notes
