Ingredients

- 1 lb flank steak
- 4 medium red potatoes
- 3 stalks broccoli
- 1 Tbsp seasoning of choice
- Optional: Other vegetables (carrots, bell peppers, green beans)
- Optional: Sauce or dressing (balsamic vinaigrette, chimichurri, Greek yogurt)
- Optional: Cooked grains (rice, quinoa, couscous)
Instructions
- Season the flank steak with your chosen seasoning and place it into the slow cooker.
- Cover and set the slow cooker to high for about 2 hours or low for 4 hours until the steak is tender.
- When the steak is about 75% cooked (roughly 1.5 hours on high), cut the red potatoes in half and place them into the slow cooker.
- Allow the potatoes to cook alongside the steak until soft (around 30 minutes on high).
- Steam the broccoli for 5-7 minutes until bright green and tender-crisp.
- Remove the steak and potatoes from the slow cooker, cool slightly, and cut into bite-sized cubes.
- Assemble the meal prep bowls with cubed steak, potatoes, and steamed broccoli. Optionally, drizzle with sauce or add seasoning.
Notes
Store meal prep bowls in sealable containers in the refrigerator for up to four days. Reheat in the microwave when ready to eat.
